there's no way around it. The game detects audio device settings on startup and never again, so plugging in/unplugging headphones won't be detected properly. It doesn't turn off all music while mounted, just the chocobo (and other mounts) music. You probably just didn't have the area's theme playing at the time. It doesn't constantly loop.
